Loaded Broccoli and Cheese Soup
 
 
Ingredients
  • 2 - 14.5 oz. cans chicken broth
  • 2-3 large carrots, peeled and diced
  • 4 medium potatoes, peeled and cubed into small pieces
  • 1 tsp. onion powder
  • 2 small heads broccoli (washed and diced small)
  • 3 TB butter
  • ⅓ cup flour
  • 3½ cups milk
  • 4 cups shredded cheddar cheese
  • 1 tsp. salt
  • ½ tsp. garlic pepper
  • 6 slices bacon, cooked and chopped
Instructions
  1. In a large pot combine chicken broth, carrots potatoes and onion powder.
  2. Bring to a boil, cover and simmer for about 10 minutes.
  3. Add broccoli, cover and simmer for an additional 10 minutes.
  4. While simmering, melt butter in a large sauce pan. Whisk in the flour and cook for another minute (or until golden brown). Whisk in milk and cook for an additional 5 minutes until the sauce thickens.
  5. Add cheese and stir until it is all melted. Add salt and garlic pepper.
  6. Pour cheese sauce into the large pot and stir until well combined.
  7. Add more milk for a thinner consistency and add any additional salt and pepper needed. Top with bacon pieces.
  8. Serve warm.

SAUSAGE, POTATO, & KALE SOUP

Sausage, Potato, and Kale Soup

altered from The Pioneer Woman Recipe

Prep: 5 Minutes Level: Easy 
Cook: 45 Minutes Serves: 12 

Ingredients

  • 1 bunch Kale, Picked Over, Cleaned, And Torn Into Bite Sized Pieces
  • 12 whole Red Potatoes, Medium slices so they don't dissolve away
  • 1 whole Onion, Chopped
  • 1-1/2 pound Italian Sausage
  • 1-1/2 tsp of  Chili Seasoning (more To Taste)
  • 3 cups Low Sodium Chicken Broth
  • 1 heaping Tbsp beef Boullion base
  • 1 quart Half-and-half
  •  1-1/2 tsp Italian Seasoning (to taste)
  • 1 tsp salt (as or if needed)
  •  Black Pepper To Taste

Preparation

Prepare the kale and set it aside. 

In a medium pot. boil sliced potatoes until tender. Drain and set aside. 

In a large pot, sweat onion and crumble and brown the Italian sausage. Drain as much as the fat as you can. Stir in the seasonings, chicken broth, Boullion base, and half-and-half. Simmer for 30 minutes.

Give it a taste and adjust seasonings as needed. Add the potatoes, then stir in the kale. Simmer an additional 10-15 minutes, then serve.

Weight Loss Magic Soup ~ by Sarah

Now, don't get all excited about the title.  There's really nothing "magic" about it.  You're just supposed to eat it for lunch, snack, and dinner for two weeks and then you'll supposedly lose weight.  Well, duh.  But I'm pretty sure that if I ate this three times a day for 14 days, I would never want to eat it ever again.  But it is a delicious soup and very, very filling.  It makes a TON--like almost more than my big crockpot could hold--so make sure you freeze it or halve the recipe if you don't think you'll get through it in a week.  Wes and I are both taking it for lunch and it looks like it's going to be the perfect amount to get us through the week.  It is delicious, fresh, and will keep you full!

Ingredients:
2 cans chicken broth (I used low-sodium)
3 cups V-8 juice (you can use low-sodium V8--which I did--or even tomato juice)
2 cans Italian diced tomatoes
1 small onion, diced
2 cloves minced garlic
1 package sliced mushrooms
3 carrots, peeled and sliced
1 zucchini, diced
1 yellow squash, diced
2 cups fresh or frozen green beans
1 can kidney beans, drained and rinsed
3-4 cups shredded cabbage
1 tsp. Italian seasoning
salt and pepper to taste
3 chicken breasts, boiled and cubed (This is my addition.  There is no way I can do lunch without meat, so I added it.  I'm sure it still keeps the calories low.)

Directions:
In a large frying pan sprayed with cooking spray, sauté garlic, onions, carrots, and mushrooms for about 5 minutes. In a large crockpot, combine sautéed garlic and vegetables with the remaining ingredients. Cook on high for 2-3 hours, or until vegetables are cooked.  (This is where I will do things differently last time.  This filled my crockpot SO full that it took forever for the soup to begin to boil and I actually had to cook it on high for about 4 1/2 hours.  So next time I will put it in my Dutch oven on the stove so that I can stir it and not have it take so long.)  This makes a large batch of soup. If you would like to freeze portions of it to use later, undercook the vegetables just a little. Pour the soup into freezer Ziplock bags and let as much air out as you can. Lay the bags flat on a cookie sheet and freeze. Once the soup is frozen flat, it is easy to layer in your freezer and won't take up much room. To thaw, place the bag in the fridge for 24 hours and then reheat.

Tortilla Soup ~ by Sarah

I found this recipe on Pinterest after wanting to find a good soup to take to Mom's for Christmas Eve.  It was definitely delicious!  I did all the prep work that morning, so putting it together was really easy.  It smelled wonderful while it was cooking and tasted even better!

Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1-½ teaspoon cumin
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon salt
1 tablespoon olive oil
1 cup diced onion
¼ cup diced green bell pepper
¼ cup red bell pepper
3 cloves garlic, minced
1 can (10 oz. can) Rotel Tomatoes And Green Chilies
32 ounces, fluid low sodium chicken stock
3 tablespoons tomato paste
4 cups hot water
2 cans (15 oz. can) black beans, drained
3 tablespoons cornmeal or masa
5 whole corn tortillas, cut into uniform strips around 2 to 3 inches

Garnishes:
sour cream
diced avocado
diced red onion
salsa or pico de gallo
grated Monterey Jack cheese
fresh cilantro

Directions:
Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix. Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside. Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir. Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered. Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips. Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese. (The garnishes really make the soup delicious.)

Beef Enchilada Soup~by Kelsey

 I got this recipe from the BEEF magazine blog.  It was entered in a recipe contest.  I only used 2 lbs of ground beef when I made it.  It is really good, and very easy to make.  And it really does taste like enchiladas!

Ingredients:
4 lbs ground beef, browned & drained
1 large can tomatoes (crushed, diced or sauce--whichever you prefer)
1 can black beans
1 can kidney beans
1 can sweet corn
1 small can green chilies
1 regular-sized can enchilada sauce (One time I used a big can and it was too rich!)
2 cans beef broth
2 envelopes taco seasoning


Directions:
Put ingredients into crockpot on low for the day, or on high for a couple of hours. It can also be cooked on the stovetop. The key is to heat through and allow flavors to meld....it will also make your house smell wonderful and drive the family nuts!

Top with sliced flour tortillas--this is important! They act like noodles and are delicious. Also offer shredded cheese, avocado, cilantro, sour cream, additional seasoning,...anything that sounds good! Enjoy!

Spicy Chicken-Corn Chowder ~ by Sarah

I got this recipe from Aunt D'Lynn.  (I think she got it from Better Homes and Gardens.)  It is good, but yowzers it's spicy!  And I even was very conservative with the spicy stuff.  So if you like spicy, you'll love it.  If you're like me and spicy things make you run for a glass of milk, you might want to just barely spice it up.  Because it would be delicious even without the heat!  I think next time I make it I will eliminate all things spicy and maybe add some smoked paprika.

Ingredients:
8 slices bacon, chopped
1 lb. (about 4 boneless, skinless breasts) bite-sized raw chicken pieces
1 1/2 c. chopped red sweet pepper
1 c. chopped sweet onion
1-2 chopped jalapeno peppers (I used half of one and it was spicy enough for me!)
4 minced garlic cloves
1/3 c. flour
6 c. reduced sodium chicken broth
2 large Yukon potatoes, chopped
2 c. frozen corn kernels
1 1/2 c. whipping cream
1/2 t. cayenne pepper (I used 1/4 t. and it was plenty for me!)
2 bay leaves

Directions:
(I used my Dutch oven to make this in--worked perfectly!)  Cook bacon.  Remove.  Reserve 1 T. drippings.  Add chicken.  Season.  Remove.  Add pepper and onion.  Cook till tender.  Add jalapeno and garlic.  Cook 3 minutes.  Stir in flour.  Cook 1 minute.  Add broth and potatoes.  Boil, then reduce heat.  Cook, uncovered, 10 minutes.  Stir in bacon, chicken, corn, cream, cayenne pepper, and bay leaves.  Simmer 15 minutes, stirring occasionally.  Remove bay leaves and serve.

I stole this picture from Better Homes and Gardens.  I forgot to take my own and Wes loved this (he loves spice so much he even added Frank's Hot Sauce!) so it didn't last long!

Potato and Sausage Soup ~Molly

I'm minorly obsessed with kale right now. It might be my new favorite vegetable. I fry it until it's crispy and put it in wraps. I chop it up and add it to scrambled eggs. I search for recipes that use it instead of studying for my Money and Banking midterm. Finding this recipe on epicurious.com was totally worth the B-.
I don't have a picture, so use your imagination. It looks like a broth-based soup. With chunks of potato, sausage, chickpeas, and kale. If you want to get fancy, add a piece of italian bread with butter on it. You could also find the recipe on Epicurious. It's actually called Kale and Chickpea Soup, but I knew none of you would read this recipe if that's what I titled this post.


Ingredients:


  • 1 medium onion, chopped (1 cup)
  • 2 garlic cloves, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil
  • 3 red potatoes(3/4 lb), cut into 1/2-inch pieces
  • 3/4 lb kale, stems and center ribs cut out and discarded, then leaves very finely chopped (4 cups)
  • 3 1/2 cups reduced-sodium vegetable broth (28 fl oz)
  • 2 cups water
  • 1 (14-oz) can chickpeas (aka garbanzo beans), rinsed and drained
  • 1/4 lb sausage, diced and browned (I used smoked bratwurst)

  • Cook onion, garlic, bay leaf, salt, and pepper in oil in a wide 4- to 6-quart heavy pot over moderate heat, stirring frequently, until onion and garlic are softened and beginning to brown, 5 to 7 minutes. Add potato, kale, broth, and water and cook, partially covered, until potatoes are tender, 15 to 20 minutes. Reduce heat to low, then add chickpeas and chorizo and gently simmer, uncovered, 3 minutes. Discard bay leaf and season with salt and pepper.

  • I made this soup for my family and a couple of young "cowboys".  They all loved it, even the kids!  It is definitely something I will make again.  It smelled so good when it was cooking!  I served it with grilled ham and cheese sandwiches and a green salad.  I took a picture so I could add it to Molly's original blog post.

Beefy Harvest Soup ~ by Sarah

This recipe is from the Oregon Beef Council.  It is one of Wes's favorites.  Definitely a good wintertime main dish!  I like it because, other than the sausage, I usually have all the ingredients in my kitchen.

Ingredients:
1 lb. ground beef
4 c. water
1 can (14 1/2 oz.) Italian-style stewed tomatoes, undrained
1 1/2 c. frozen mixed vegetables
4 t. beef bouillon
1 c. uncooked large elbow macaroni
6 oz. smoked beef sausage, cut in 1/2-inch pieces

Directions:
Brown ground beef.  In large saucepan combine water, tomatoes, mixed vegetables, and bouillon.  Bring to a boil.  Stir in macaroni and ground beef; return to a boil.  Reduce heat, simmer uncovered for 8 minutes, stirring occasionally.  Stir in sausage; continue simmering 2-4 minutes or until macaroni is tender.  Season with salt and pepper as desired.  (I also add Lawry's seasoning salt and garlic salt.)


The kids love it, too!

Potato-Bacon Chowder ~ by Sarah

This is a recipe Mom has been making for years and I LOVE it!  I usually serve it with cornbread, but tonight I served it with a loaf of french bread I had purchased and it was delicious when dipped in the chowder.

Ingredients:
8 strips bacon, cut up
1 c. chopped onion
2 c. red potatoes
1 c. water
1/2 t. salt (I also add garlic salt and seasoned salt)
dash pepper
10 3/4 oz. can cream of chicken soup (if you're a chicken hater like Kelsey and Molly you could probably use cream of celery or something like that)
1 c. sour cream
1 3/4 c. milk
2 T. chopped fresh parsley (or 1 T. dried parsley flakes)

Directions:
Cook bacon in 3 qt. saucepan.  Add onion; saute 3 minutes.  Pour off drippings (but I usually take the bacon out and put it on a paper towel so it drains really well--I then add it back to the soup at the end).  Add potatoes, water, salt, and pepper.  Bring to a boil.  Cover; simmer 10-15 minutes until potatoes are tender.  Gradually stir in soup, sour cream, milk, and parsley.  Bring to serving temperature over low heat.  Do not boil.

Tim's Taco Soup ~ by Kelsey

I got this recipe back when I worked at the Farm Service Agency in La Grande.  Tim, a guy that also worked there, brought this soup to a potluck.  Everyone loved it, and I stole the recipe.  It's very simple, I almost always have the ingredients on-hand, and my kids will eat it.  There are no measurements, and it cooks all together in one pan (less dish-washing!).  I will list the ingredients, you adjust the amounts to suit you.  We always top it with sour cream or shredded cheese, and a side of bread.  And it's even better the second day...
Since this is my first post, let me clarify what I mean by "ground beef".  That means hamburger cut by Gary at the Wasco Market.  Nobody does it better.  In fact, I wouldn't even bother buying hamburger anywhere else.  Gary's is lean, you never have to drain any grease, and it is yummy.  Hopefully it comes from beef cattle that have benefited from growth hormones and antibiotics.  None of that organic stuff.  Since we haven't fattened our own in awhile, we buy 50 pounds at a time from Gary.  Okay, here is the recipe:

Ground Beef (my packages are about 1 1/2 pounds, so that's how much I use)
Taco Seasoning Packet
Ranch Dressing Packet
2-4 Cans of Beans (Kidney or Black, or Both)
Frozen Corn
Canned Diced Tomatoes
Water

Cook the beef, then add the other ingredients and simmer as long as you like.

This is a delicious recipe--but some of the ingredients are a little hard to find in The Dalles. I've used other kinds of beans when I couldn't find cannellini, and used other colors of lentils and it worked just fine.

Ingredients:
• 3 tablespoons olive oil
• 2 onions, chopped
• 2 celery stalks, cut into 1/2-inch pieces
• 1 carrot, peeled and cut into 1/2-inch pieces
• 1 red bell pepper, cut into 1/2-inch pieces
• 6 cloves garlic, finely chopped
• 1/2 cup chili powder
• 1 tablespoon ground coriander
• 1 tablespoon ground cumin
• 2 teaspoons dried oregano
• 1 teaspoon dried crushed red pepper, optional
• 2 (14 1/2-ounce) cans diced tomatoes with juices
• 1 (11 1/2-ounce) can tomato juice
• 1 (6-ounce) can tomato paste
• 1 (3-inch) piece Parmesan cheese rind, optional
• 2 teaspoons salt, plus more to taste
• 8 cups vegetable or chicken broth
• 2 (15 1/2-ounce) cans garbanzo beans, drained and rinsed
• 2 (15-ounce) cans cannellini beans, drained and rinsed
• 1/2 cup dried green lentils
• 3 cups broccoli florets
• 2 zucchini, cut crosswise into 1/2-inch thick rounds
• 2 yellow crookneck squash, cut crosswise into 1/2-inch thick rounds
• 1/2 cup freshly shredded Parmesan
• 1/4 cup thinly sliced fresh basil leaves

Directions:
Heat the oil in a heavy large stockpot over medium-high heat. Add the onions, celery, carrot, bell pepper, and garlic, and saute until the onions are translucent, about 15 minutes. Add the chili powder, coriander, cumin, oregano and crushed red pepper, and cook for 2 minutes. Stir in the tomatoes with their juices, tomato juice, tomato paste, cheese rind, and 2 teaspoons of salt. Add the broth, garbanzo beans, cannellini beans, and lentils. Stir in the broccoli, zucchini, and yellow squash. Bring to a simmer over high heat. Decrease the heat to medium. Simmer, uncovered, until the lentils are tender and the mixture thickens slightly, stirring often, about 20 minutes. Season the stew to taste with more salt, if desired.

Ladle the stew into bowls. Sprinkle with the shredded cheese and basil, and serve.
